Jack-fruit has umpteen benefits and in Bengal it is called echor. It is an authentic spicy dish of West Bengal. It is a summer recipe as green jack fruit are available in summer. In Bengal, this mouthwatering Green jack-fruit recipe is considered as the substitute of mutton kosha. The main ingredients are green jack-fruit, shrimp and potato. It’s a very scrumptious household dish which makes everyone drooling.

Benefits:-
Green jack-fruit – It is a starchy vegetable which is rich vitamin A,B and C. it is low in calories, fat and sodium free. It contains huge amount of fiber which helps to promote better digestion and to reduce weight.it also has potassium. The seeds are rich in thiamine and riboflavin which is very beneficial for our skin, eyes and hair.
Shrimp- They are loaded with antioxidant and low in calories which helps in reducing weight. They are beneficial for our eyes. Also helps in strengthening our bones as they contain vitamin D.
Potatoes – are excellent source of vitamins and minerals. It contains antioxidant. Potatoes are rich in starch which helps in controlling blood sugar level and improves our digestive system.

Time required:-40-50 min. (approx.)

Course: – Lunch/Dinner

Can be served with: – hot steamed rice and roti also.

Ingredients :-
·        Green jackfruit- 750gm
·        Shrimps – 200-250gm
·        Potato – 1 medium size
·        Tomato – 02(medium size) finely chopped
·        Garlic paste –  1.5 tsp
·        Ginger paste – 1.5 tsp.
·        Onion -3 ( medium size finely chopped)
·        Turmeric powder – 1.5tsp
·        Red chili powder – 2-3tsp
·        Cumin powder – 1tsp
·        Coriander powder – 1tsp
·        Garam masala – 1/2tsp
·        Cinnamon stick – 2
·        Bay leaves- 2
·        Dried red chili – 2
·        Salt – as per taste
·        Mustard oil – 5-6tbsp

Direction for the recipe:-

  • Wash the shrimps and marinate them with turmeric powder and salt and set aside.
  • The most important and troublesome part of the recipe is removing the peel of green jack fruit. It should be done very preciously. Before removing its skin, rub mustard oil in your palm otherwise the liquid coming from it while cutting, will stick to your palm and it became difficult to remove them. Remove the skin and cut the green jack fruit in cubes.
  • Then it’s time for potato. Peel them off and cut them in cubes. Chopped onion and tomato. Peel off ginger and garlic and make smooth paste of ginger and garlic.
  • Boil the green jack-fruit and potato in a pressure cook. Add pinch of salt and turmeric powder in the water and give 5-6 whistle. Drain them from the cooker and set aside.
  • Heat oil in a kadai / pan. When smoke starts coming from the oil, add the shrimp. Fry them till they turn golden brown and set them aside.
  • In the same kadai/pan, temper with bay leave, red chilies and cinnamon stick and Saute till they crackle.
  • Now add the chopped onion and tomato. Add turmeric powder and salt. Simmer it and cook it until it tenders.
  • Then add ginger garlic paste, cumin and coriander powder, red chili powder and mix them properly. Cook the masala for 2-3 min.
  • Now add potato and jack-fruit. Stir them so that the masala gets uniformly coated on each piece of potato and jack fruit.  Cook them for 5-6 min.
  •  Add water and let it boil and cook for 7-8 min.
  • Add the fried shrimps and cook it for 2 min more.
  • Lastly sprinkle garam masala. Turn off the flame and cover it.
  •  After 2 min, remove the cover, and serve your hot delicious dish.

My tips

  • Instead of chopped onion and tomato, you can use their paste.
  • You can prepare the dish without shrimp also.
  • This dish can be prepared as a vegetarian dish. For this avoid using shrimps, onion, ginger and garlic. But the non-veg recipe is more delicious then the vegetarian.
